Going Out To Eat, But Staying Green

For many consumers that support "Going Green", there are eateries which cater to their idealology. For example, Gusto Grilled Organics in Greenwhich Village, has been cerified organic under the Northeast Organic Farming Association of N.Y.. However, at 13 New York and Chicago restaurants, they have found other ways of going green. Although the menus may not translate into "Green" these establishments have found other ways to be considered Green". At Del Posto, biodisel trucks fueled by its used cooking oil bring ingredients from upstate and return with the restaurant's compost. Going "Green", can be accomplished in many different ways, the menu is only the beginning.
This is the kind of venture our city needed very bad!
I visited Gusto grilled organics and I can tell these guys are very serious about the way they do things.
All organic food and green restaurant (but really green) and you can easily tell they are not stepping into the greewash... they mean it.
I found the food to be awesome and the passion they have when sharing their visions is amazing.
I also found vey interesting what they do with the water.. I’m wandering why don’t we have more good quality water for free in NYC restaurants?
I truly believe more businesses should somehow emulate the ideas these young guys have about sustainable business.

Thank you for recommending Gusto's. I am always looking for great organic restaurants and I didn't know about this one. I'll definitely check them out and write something about my experience.
